Ingredients

The following ingredients have 5 Servings
  • 1 tbsp extra virgin olive oil
  • 1 1/2 cups cooked brown rice
  • 1 lb fresh ground pork
  • 3/4 cup onion (chopped )
  • 1 large garlic clove (minced)
  • 16 oz carton chopped tomatoes
  • 8 oz can tomato sauce
  • 2 small yellow squash (chopped)
  • 1 cup fresh mushrooms (chopped)
  • 1 tsp Italian seasoning
  • 1/2 tsp garlic powder
  • 1 tsp sea salt
  • fresh cracked black pepper to taste

Instruction

  • Heat EVOO (extra virgin olive oil) in a large saute pan over medium heat.
  • Add garlic, onion and pork and cook until onion is soft and meat is no longer pink.
  • Add mushrooms and cook for 3-4 minutes, until mushrooms are soft and lightly golden brown.
  • Drain and add tomatoes, tomato sauce and seasonings.
  • Bring to a boil, then reduce heat to low and add squash and rice.
  • Cook for 7-10 minutes until squash is tender.
  • Garnish with fresh chopped parsley and serve.
