Ingredients
The following ingredients have 5 Servings
- 1 tbsp extra virgin olive oil
- 1 1/2 cups cooked brown rice
- 1 lb fresh ground pork
- 3/4 cup onion (chopped )
- 1 large garlic clove (minced)
- 16 oz carton chopped tomatoes
- 8 oz can tomato sauce
- 2 small yellow squash (chopped)
- 1 cup fresh mushrooms (chopped)
- 1 tsp Italian seasoning
- 1/2 tsp garlic powder
- 1 tsp sea salt
- fresh cracked black pepper to taste
Instruction
- Heat EVOO (extra virgin olive oil) in a large saute pan over medium heat.
- Add garlic, onion and pork and cook until onion is soft and meat is no longer pink.
- Add mushrooms and cook for 3-4 minutes, until mushrooms are soft and lightly golden brown.
- Drain and add tomatoes, tomato sauce and seasonings.
- Bring to a boil, then reduce heat to low and add squash and rice.
- Cook for 7-10 minutes until squash is tender.
- Garnish with fresh chopped parsley and serve.
