Ingredients
The following ingredients have 4 Servings
- 2- (15-ounce)cans Cannellini beans, (rinsed and drained)
- 1- (14-ounce)can fire roasted diced tomatoes
- 1/4 cup chopped scallions
- 1/2 cup prepared pesto
- 1 fennel bulb, (chopped)
- 1 1/2 cup long grain rice
- 3 cups vegetable broth
- shredded Asiago cheese ((optional garnish))
Instruction
- Add all of the ingredients; except the cheese into a slow cooker; then stir to mix everything together.
- Cook on high for 3 hours until the rice is cooked through and the liquid has evaporated.
- Portion into serving bowls; then garnish with cheese.
