Ingredients

The following ingredients have 4 Servings
  • 2- (15-ounce)cans Cannellini beans, (rinsed and drained)
  • 1- (14-ounce)can fire roasted diced tomatoes
  • 1/4 cup chopped scallions
  • 1/2 cup prepared pesto
  • 1 fennel bulb, (chopped)
  • 1 1/2 cup long grain rice
  • 3 cups vegetable broth
  • shredded Asiago cheese ((optional garnish))

Instruction

  • Add all of the ingredients; except the cheese into a slow cooker; then stir to mix everything together.
  • Cook on high for 3 hours until the rice is cooked through and the liquid has evaporated.
  • Portion into serving bowls; then garnish with cheese.
