Ingredients
The following ingredients have 20 Servings
- 10 lb spiral cut ham
- 3 cups fresh cranberries
- 4 tablespoons honey
- juice and zest of half of an orange
- 1/4 tsp ground cloves
- 1 teaspoon ground cinnamon
- 1/2 cup brown sugar (do not mix with other ingredients)
Instruction
- Preheat oven to 275F.
- Bake ham, flat side down, covered with foil for 1.5 hours.
- In a medium saucepan, combine cranberries, honey, orange juice and orange zest, cloves and cinnamon. Cook on medium heat for 10-15 min. Stir it occasionally as it's cooking. Cover it when you start to hear the cranberries popping. If you want a smooth sauce, insert a hand held blender and pulse it until it becomes an almost smooth sauce.
- When the ham is done baking for initial 1.5 hours, remove it from the oven.
- Higher the oven temperature of oven to 425F.
- Then, with your hand, spread the cranberry orange sauce all over the top and sides of the ham.
- Sprinkle the brown sugar on top of the cranberry orange sauce that you just added to the ham, as evenly as you can. Hold one hand below the area that your sprinkling so the brown sugar doesn't fall into the pan drippings.
- Place the ham back in the oven, uncovered and bake it again with the sauce and brown sugar on top for 15 min while the brown sugar melts and crusts the outside of the ham. Do NOT place the ham too close to the heat or it'll burn and possibly catch fire as sugar is flammable.
- When you remove the ham from the oven, let it rest for about ten minutes before cutting. You may spoon the pan drippings over the ham before you serve it, if desired.
