Ingredients
The following ingredients have 4 Servings
- 2 cups raisins
- 3 cups flour
- 1 cup sugar
- 3 tsp baking powder
- 1 tsp salt
- 1/4 cup cold butter
- 1 1/2 cups milk
- 2 eggs (beaten)
Instruction
- Fill a saucepan half way with water and bring to a boil.
- Add raisins and continue boiling for 3 minutes.
- Drain and lightly dust with flour.
- In a large mixing bowl, sift together flour, sugar, baking powder, and salt.
- Blend in cold butter with a pastry blender or two knives.
- Stir in milk and eggs until fully moistened.
- Carefully stir in raisins.
- Divide batter up evenly between 24 muffin cups with paper liners or greased well.
- Bake at 350 degrees for 20 - 30 minutes. Do not overbake.
- Allow muffins to cool completely before serving.
