Ingredients
The following ingredients have 4 Servings
- 2 1/2 lbs Yukon Gold potatoes
- 1/2 head cabbage, cut into slices
- 2/3 cup heavy cream
- 3 tbsp salted butter
- 1/2 tsp salt
- 1/2 tsp ground black pepper
- 8 slices bacon, chopped
- 5 green onion, sliced
Instruction
- Boil potatoes in a medium pot till tender and ready to mash, about 10 minutes. While potatoes cook, place cabbage in a microwave safe bowl and add about 1 1/2 of water to the bowl. Cover and microwave for about 10 minutes, or until tender.
- While the potatoes and cabbage cook, cook bacon in a skillet until crisp. Transfer to a paper towel lined plate for later.
- Drain water from potatoes. Add cream and butter and mash using a hand mixer or a potato masher. Add salt and pepper.
- Remove cabbage from water and add to potatoes. Gently stir. Add the bacon and green onion (reserving about a tbsp for topping of each).
- To serve, place a little additional butter in the center and top with bacon and green onion.
