The following ingredients have 4 Servings
- 1 (9-inch) unbaked pie crust
- 4 medium baked sweet potatoes (peeled and mashed)
- 1/2 cup butter (softened)
- 1 1/2 cups brown sugar
- 4 large eggs
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon salt
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon ground cloves
- 1 2/3 cup evaporated milk
Instruction
- Preheat oven to 425 degrees Fahrenheit. Place pie crust into a standard 9-inch pie plate and refrigerate until ready to fill.
- In a large mixing bowl, use a hand mixer to beat together butter and sugar until creamy, about 90 seconds.
- Beat in mashed sweet potatoes, eggs, cinnamon, salt, nutmeg, cloves, and evaporated milk until smooth.
- Pour filling into prepared pie crust.
- Bake in the preheated 425 degree oven for 15 minutes. Reduce heat to 350 degrees and continue baking until filling is set in the center, 45 to 50 minutes.
- Remove from oven and let cool completely before slicing and serving. Store in the refrigerator.
