- 2 leeks (quartered and sliced)
- 3 pounds Yukon gold potatoes (about 8 medium potatoes) (peeled & diced into 1" cubes)
- 3 cups low sodium vegetable broth
- 3 tablespoons nutritional yeast
- 2 teaspoons smoked paprika
- 1-2 cups unsweetened cashew milk (or milk of choice)
- salt + pepper (to taste)
- vegan bacon bits
- green onion, chives or parsley
