  • 2 leeks (quartered and sliced)
  • 3 pounds Yukon gold potatoes (about 8 medium potatoes) (peeled & diced into 1" cubes)
  • 3 cups low sodium vegetable broth
  • 3 tablespoons nutritional yeast
  • 2 teaspoons smoked paprika
  • 1-2 cups unsweetened cashew milk (or milk of choice)
  • salt + pepper (to taste)
  • vegan bacon bits
  • green onion, chives or parsley
