Ingredients
The following ingredients have 4 Servings
- 1 white onion (diced)
- 2 red bell peppers (diced)
- 1 tsp cumin seed
- 4 cloves garlic (minced)
- 1 large can (796ml plum tomatoes, drained & chopped)
- 2 cans black beans (drained)
- 1 can red kidney beans (drained)
- 1 cup vegetable broth
- 1 chipotle pepper (in adobo sauce)
- 1 tbsp granulated sugar
- 1 tsp cumin powder
- 1 tsp paprika
- 1 tsp chili powder
- ½ tsp smoked paprika
- 1 tsp lime zest
- ¼ tsp salt (or more, to taste)
- Chopped fresh cilantro – for serving
Instruction
- In Instant Pot, on sautée setting, cook the onions until translucent. Add cumin seed & bell pepper and continue cooking about 5 minutes. Add garlic & stir. Add remaining ingredients and stir.
- Lock the pressure and turn on pressure cook for 10 minutes, then allow a natural release.
- Delicious served with sour cream, cheese & scallions (will not be vegan if eaten with sour cream and cheese.)
