Ingredients

The following ingredients have 6 Servings
  • 2 tablespoons butter
  • 1 medium onion (diced)
  • 4 cloves garlic (minced)
  • 1/4 teaspoon crushed red pepper
  • 1 teaspoon Italian seasoning dried herbs
  • 28 ounces crushed San Marzano tomatoes
  • 3 cups water
  • 1/2 cup vodka
  • 16 ounces penne pasta (dry)
  • 1/2 cup heavy cream
  • Salt and pepper
  • Parmesan cheese
  • Fresh Basil

Instruction

  • Click on Sauté and once it displays HOT, add the butter and melt it.
  • Add onions, garlic, and stir cooking for 1 minute. Add crushed red pepper, and Italian dried herbs, continue to cook everything for 2-3 minutes.
  • Add in the crushed tomatoes, water, vodka, and penne pasta. Stir gently to coat the pasta in the liquid.
  • Cancel Saute function.
  • Cover and lock the lid, seal the valve. Pressure Cook High for 4 minutes, followed by a Quick Release.
  • Unlock the lid and click again on Saute.
  • Add the cream, stir to combine, if needed add more and cook for 2-3 minutes.
  • Turn off the IP.
  • Serve the pasta garnished with Parmesan cheese and fresh basil
