Ingredients
The following ingredients have 6 Servings
- 2 tablespoons butter
- 1 medium onion (diced)
- 4 cloves garlic (minced)
- 1/4 teaspoon crushed red pepper
- 1 teaspoon Italian seasoning dried herbs
- 28 ounces crushed San Marzano tomatoes
- 3 cups water
- 1/2 cup vodka
- 16 ounces penne pasta (dry)
- 1/2 cup heavy cream
- Salt and pepper
- Parmesan cheese
- Fresh Basil
Instruction
- Click on Sauté and once it displays HOT, add the butter and melt it.
- Add onions, garlic, and stir cooking for 1 minute. Add crushed red pepper, and Italian dried herbs, continue to cook everything for 2-3 minutes.
- Add in the crushed tomatoes, water, vodka, and penne pasta. Stir gently to coat the pasta in the liquid.
- Cancel Saute function.
- Cover and lock the lid, seal the valve. Pressure Cook High for 4 minutes, followed by a Quick Release.
- Unlock the lid and click again on Saute.
- Add the cream, stir to combine, if needed add more and cook for 2-3 minutes.
- Turn off the IP.
- Serve the pasta garnished with Parmesan cheese and fresh basil
