Ingredients

The following ingredients have 6 Servings
  • 1 Tbsp olive oil
  • 1 cup diced onion
  • 2 ribs of celery, finely chopped
  • 1 large carrot, finely chopped
  • 6 medium basil leaves, torn into small pieces
  • 1 Tbsp minced garlic
  • 3 cups chicken broth or vegetable broth (or 3 cups water and 1 Tbsp Better than Bouillon)
  • 1 (28 oz) can crushed tomatoes
  • ¼ cup tomato paste
  • Salt (I used ½ tsp)
  • Fresh cracked pepper
  • Optional toppings: cream, fresh basil, parmesan cheese, oyster crackers or croutons
