Ingredients
The following ingredients have 6 Servings
- 1 Tbsp olive oil
- 1 cup diced onion
- 2 ribs of celery, finely chopped
- 1 large carrot, finely chopped
- 6 medium basil leaves, torn into small pieces
- 1 Tbsp minced garlic
- 3 cups chicken broth or vegetable broth (or 3 cups water and 1 Tbsp Better than Bouillon)
- 1 (28 oz) can crushed tomatoes
- ¼ cup tomato paste
- Salt (I used ½ tsp)
- Fresh cracked pepper
- Optional toppings: cream, fresh basil, parmesan cheese, oyster crackers or croutons
