Ingredients

The following ingredients have 4 Servings
  • 2 tbsp extra virgin olive oil
  • 1/2 cup chopped onion (1/2 medium onion)
  • 1/4 cup chopped celery (1-2 ribs)
  • 1 cup chopped carrots (about 2 carrots)
  • 4 cloves minced garlic
  • 1/4 tsp Italian seasoning
  • salt and pepper to taste
  • 6 cups vegetable broth (chicken broth can be used instead)
  • 14.5 oz diced tomatoes with juice
  • 1/2 cup ditalini pasta (or similar small pasta )
  • 15 oz cannelini beans (drained) (or Great Northern Beans or red kidney beans)
  • 4 cups fresh spinach leaves

Instruction

  • Add celery, onions, carrots, minced garlic, olive oil and seasonings to Instant Pot and set the saute function on for 6 minutes. Stir when it starts to sizzle.
  • When timer is up for saute function, add the vegetable broth, tomatoes with juice, pasta, drained beans and spinach leaves. Set on high pressure for 5 minutes. Manual release pressure and stir before serving.
