- THE POTATOES
- 1-1/2 pound(s) Golden Little potatoes
- 1 cup(s) chicken broth
- 1 tablespoon(s) garlic, minced
- 1/2 stick(s) butter, cut into pieces
- 1/2 cup(s) Parmesan cheese
- - garnish with dried or fresh chives
- THE MEATLOAF
- 2 pound(s) lean ground beef
- 2 - eggs, beaten
- 3/4 cup(s) milk
- 1 box(es) (6-oz) stuffing mix
- 1 medium onion, chopped
- 1 - bell pepper, chopped
- 4 clove(s) garlic, finely chopped
- 1 teaspoon(s) salt
- 1/2 teaspoon(s) rubbed sage
- - pepper, to taste
- THE MEATLOAF GLAZE
- 1 cup(s) ketchup
- 1/2 cup(s) brown sugar, firmly packed
- 2 teaspoon(s) Worcestershire sauce
Instruction
- MEATLOAF GLAZE In a bowl mix together the ketchup, packed brown sugar, and Worcestershire sauce. Mix until the sugar is dissolved. Set aside 1/2 cup to use to glaze meatloaf.
- FOR THE MEATLOAF In a large bowl, combine the ground beef, eggs, milk, stuffing mix, onion, bell pepper, garlic, salt, sage, pepper, and all but 1/2 cup of the meatloaf glaze. Be sure this is well mixed, I suggest using your clean hands to mix. Divide this into 2 equal portions.
- Cut two aluminum trays in half across the middle. Overlap the halves and adjust them to a size that will fit the Instant Pot. Put the meat loaves into the two improvised aluminum trays.
- FOR THE POTATOES Put the potatoes, chicken broth, and garlic in the bottom of the Instant Pot.
- Place a trivet insert on top of the potatoes. Place one of the meatloaves on top of the trivet. Place a second trivet on top of the first meatloaf and add the second Meatloaf on the second trivet.
- Put the lid on the Instant Pot, be sure the vent valve is closed, and the lid is properly secured. Push the MANUAL setting and set for 20 minutes on high pressure.
- When the 20 minutes of pressure cooking is complete, move the valve to VENTING for a quick release of pressure. When the pressure has dissipated, carefully remove the lid of the Instant Pot.
- Using oven mitts, carefully remove the meatloaves to a baking sheet. Use the reserved meatloaf glaze to coat the top of the meatloaves.
- Set your oven to "High Broil" and put the meatloaves under the broiler for a few minutes. When the glaze is hot and bubbly, remove the loaves from the oven and allow them to cool and use a large spatula to move to a serving plate.
- Carefully remove the potatoes to a serving dish. Add the melted butter, Parmesan cheese, and garnish with the chives.
