Ingredients

The following ingredients have 4 Servings
  • 2.5 lbs pork tenderloin
  • 2 tablespoons olive oil
  • 1 teaspoon minced garlic ((2 to 3 cloves))
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup maple syrup
  • 1/3 cup orange juice
  • 1/4 cup brown sugar
  • 2 tablespoons tomato paste

Instruction

  • In a medium bowl, whisk together the syrup, orange juice, brown sugar, and tomato paste. Set the bowl aside to prepare the pork. 
  • Add the olive oil and pork to the pot. Using the saute feature, lightly braise each side of the pork. Add in the minced garlic, salt and pepper, and continue to saute for about a minute. Turn off the saute feature. 
  • Pour the prepared liquid mixture over the pork, and spoon the liquids over the meat.
  • Close and lock the lid. Turn the valve to sealing. Cook on high pressure for 5 minutes, then leave the pot for the natural release of steam, for an additional 15 minutes. Turn the valve to release the remaining steam. Carefully remove the lid and gently stir juices and spoon over the cooked pork. 
  • Remove the pork from the juices, and place on a large plate to slice and serve.
