Ingredients
The following ingredients have 4 Servings
- 1 lb ground beef
- 1 onion (diced)
- 5 medium potatoes (diced)
- 10 oz Rotel
- 16 oz frozen vegetables
- 4 c beef broth
- 1 tsp pepper
- 1/2 tsp garlic powder
Instruction
- Set pot to saute with a tbsp of olive oil, ground beef and diced onions. Cook until meat is no longer pink, then turn pot off.
- Deglaze pot with bit of broth to get stuck on meat off the bottom. Add in remaining ingredients and stir.
- Close lid and steam valve and set on high pressure for 6 minutes.
- Do a quick release, lift lid, stir, and serve with parmesan cheese on top.
