Ingredients

The following ingredients have 38 Servings
  • 1 pound Ground Beef ((or Lamb), lean)
  • 1/2 pound Ground Pork (lean)
  • 1/4 cup Distilled White Vinegar
  • 3 Tablespoons Extra Virgin Olive Oil
  • 1 cup Tzatziki Sauce ((for dipping))
  • 3/4 cup Rolled Oats ((or crushed Pork Rinds))
  • 4 ounces Red Onion (quartered)
  • 1 large Egg
  • 1 Tablespoon Extra Virgin Olive Oil ((divided))
  • 1/4 cup Fresh Mint Leaves
  • 1 teaspoon Kosher Salt
  • 1/2 teaspoon Ground Cumin
  • 1/2 teaspoon Dried Oregano
  • 1/4 teaspoon Ground Cinnamon
  • 1/4 teaspoon Freshly Ground Black Pepper

Instruction

  • Add Meatball Mix ingredients to the bowl of a large food processor and process, until crumbly.
  • Add meat and pulse to combine.
  • Add 3 Tablespoons Oil to Pressure Cooker cooking pot.
  • Form Meatballs with a 1.5 inch Cookie Scoop and then roll into a ball.  
  • Carefully place Meatballs and into Instant Pot Pressure Cooker cooking pot.
  • Pour Vinegar over Meatballs.
  • Lock on Lid and close Pressure Valve. Cook at High Pressure (most machines default to high pressure) for 4 minutes.  
  • When Beep is heard, wait 10 minutes and then release any remaining pressure.
  • Garnish with Lemon Zest and a squeeze of Lemon Juice.  Serve with Tzatziki Sauce and Feta Cheese.
