Ingredients

The following ingredients have 5 Servings
  • 1 Tbsp butter
  • ½ cup diced yellow or white onion
  • 1 large garlic clove, minced
  • 1 ½ cups chicken broth
  • 1 ½ tsp dijon mustard
  • ¼ tsp salt
  • ½ tsp dried parsley
  • ¼ tsp black pepper
  • ¼ tsp dried oregano
  • ¼ tsp dried thyme
  • 1 bay leaf
  • ½ cup uncooked wild rice
  • ½ cup uncooked brown rice
  • 1 honeycrisp apple, cored and diced
  • ⅓ cup craisins
  • ⅓ cup toasted chopped pecans
  • 1 tsp apple cider vinegar
  • Optional: goat cheese for topping

Instruction

  • Turn your Instant Pot to the saute setting. When the display says HOT add in the butter and swirl it around until it is melted. Add in the diced onion and saute for about 4-5 minutes. Add in the garlic and saute for 30 seconds.
  • Turn off the saute setting. Add in the chicken broth, dijon mustard, salt, parsley, pepper, oregano, thyme, bay leaf and rices. Stir.
  • Cover and pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 25 minutes on high pressure. When the time is up let the pressure release naturally for 10 minutes and then move the valve to venting.
  • Remove the lid and stir in the apple, craisins, pecans and vinegar.
  • Serve topped with a sprinkling of goat cheese, if desired.
