Ingredients

The following ingredients have 3 Servings
  • 2 cups jasmine or basmati rice (or white long grain)
  • 2 cups vegetable broth (or water)
  • 1 Tablespoon butter (optional)
  • 1 lime (zested and juiced (~2 TBSP))
  • 1 teaspoon kosher salt (or to taste)
  • ½ cup cilantro (chopped)

Instruction

  • Rinse the rice in a fine-mesh strainer until the water runs clear. Optional but recommended.
  • In the bowl of your Instant Pot, add the rinsed rice and combine with water, butter, and salt. Cover and set to sealing.
  • Cook on high pressure for 3 minutes for perfectly al dente rice (or 4 minutes for more well-done rice). Allow it to naturally release for 10 minutes, then release any remaining pressure. Fluff the rice with a fork and stir in lime juice, lime zest, and cilantro.
  • Serve immediately with your favorite dishes!
