The following ingredients have 6 Servings
- 2 tablespoons butter
- 1/2 yellow onion (diced)
- 1 1/2 cups carrots
- 1 1/2 cups celery
- 3 cloves garlic (minced)
- 8 oz sliced mushrooms
- 1 cup wild rice rice (this was tested with 100% wild rice, not a blend)
- 1 1/2 lb chicken tenderloins or chicken breasts
- 5 cups low sodium chicken broth (you can add more at the end if you want to or when reheating)
- 1 teaspoon poultry seasoning
- 1/2 teaspoon dried thyme
- 1/2 teaspoon salt
- 2/3 cup canned coconut cream or canned coconut milk
