Ingredients

The following ingredients have 6 Servings
  • 2 tablespoons butter
  • 1/2 yellow onion (diced)
  • 1 1/2 cups carrots
  • 1 1/2 cups celery
  • 3 cloves garlic (minced)
  • 8 oz sliced mushrooms
  • 1 cup wild rice rice (this was tested with 100% wild rice, not a blend)
  • 1 1/2 lb chicken tenderloins or chicken breasts
  • 5 cups low sodium chicken broth (you can add more at the end if you want to or when reheating)
  • 1 teaspoon poultry seasoning
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 2/3 cup canned coconut cream or canned coconut milk
