  • 2 cups brown rice
  • 2 tablespoons coconut aminos (optional**)
  • 1 tablespoon freshly chopped thyme (or 1 teaspoon dried)
  • Salt and freshly ground pepper (to taste)
  • 2 boneless skinless chicken breasts (seasoned with salt and pepper)
  • 1 cup grated gruyere cheese (or your favorite)
  • Freshly grated parmesan (for serving (optional))
