- 2 cups brown rice
- 2 tablespoons coconut aminos (optional**)
- 1 tablespoon freshly chopped thyme (or 1 teaspoon dried)
- Salt and freshly ground pepper (to taste)
- 2 boneless skinless chicken breasts (seasoned with salt and pepper)
- 1 cup grated gruyere cheese (or your favorite)
- Freshly grated parmesan (for serving (optional))
