The following ingredients have 6 Servings
- 1 tablespoon olive oil

- 1 small onion, chopped
- 2 carrots, peeled and chopped
- 2 celery ribs, chopped
- 2 garlic cloves, minced
- 1 medium butternut squash, peeled, seeded and cubed ((about 2 to 2.5 pounds))
- 1 large apple core and chopped ((granny smith or McIntosh))
- 3 thyme springs
- 4 cups chicken or vegetable stock
- Salt and ground black pepper to taste
- 1/3 cup half and half or heavy cream
- 4 slices thick-cut bacon, chopped
- 3/4 cup brown sugar
- 1/3 cup all-purpose flour
- 1 1/2 cups pecans, roughly chopped
- 6 tablespoons butter, melted
- 2 teaspoons fresh rosemary, chopped
- 1/4 teaspoon ground cayenne pepper ((more or less to taste))
