Ingredients

The following ingredients have 4 Servings
  • 1 pounds beef stew meat
  • 1 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 1 tablespoons butter or neutral flavored oil
  • 1/2 large onion (chopped)
  • 1 celery stalks (chopped)
  • 3 cups beef broth
  • 1 teaspoon dried thyme or 2 teaspoons fresh thyme leaves
  • 2 large carrots (peeled and cut into chunks)
  • 1/2 pound potatoes (peeled and cut into chunks)
  • 1 teaspoons cornstarch
  • 2 teaspoons water
  • 2 tablespoons chopped fresh parsley

Instruction

  • Turn the Instant Pot to Saute, then select More. Wait for the pot to heat up, then add the oil.
  • Add the stew meat to the pot and season with salt and pepper to taste. Cook for 3-4 minutes on each side or until browned.
  • Place all the meat in the pot along with the onion, garlic, carrots, beef broth, tomato paste, dried thyme leave, bay leaf, and salt and pepper to taste.
  • Stir to combine. Seal the Instant Pot and set it to Manual High Pressure for 30 minutes.
  • Carefully vent the pressure valve, or let the pressure release manually.
  • Remove 1/3 cup of stew liquid from the pot. Add the cornstarch and whisk until smooth.
  • Pour the cornstarch mixture back into the pot, and turn the pot back to the Saute function.
  • Sprinkle with parsley, then serve.
