Ingredients
The following ingredients have 4 Servings
- 1 pounds beef stew meat
- 1 teaspoon salt
- 1/2 teaspoon ground black pepper
- 1 tablespoons butter or neutral flavored oil
- 1/2 large onion (chopped)
- 1 celery stalks (chopped)
- 3 cups beef broth
- 1 teaspoon dried thyme or 2 teaspoons fresh thyme leaves
- 2 large carrots (peeled and cut into chunks)
- 1/2 pound potatoes (peeled and cut into chunks)
- 1 teaspoons cornstarch
- 2 teaspoons water
- 2 tablespoons chopped fresh parsley
Instruction
- Turn the Instant Pot to Saute, then select More. Wait for the pot to heat up, then add the oil.
- Add the stew meat to the pot and season with salt and pepper to taste. Cook for 3-4 minutes on each side or until browned.
- Place all the meat in the pot along with the onion, garlic, carrots, beef broth, tomato paste, dried thyme leave, bay leaf, and salt and pepper to taste.
- Stir to combine. Seal the Instant Pot and set it to Manual High Pressure for 30 minutes.
- Carefully vent the pressure valve, or let the pressure release manually.
- Remove 1/3 cup of stew liquid from the pot. Add the cornstarch and whisk until smooth.
- Pour the cornstarch mixture back into the pot, and turn the pot back to the Saute function.
- Sprinkle with parsley, then serve.
