Ingredients

The following ingredients have 4 Servings
  • 3 pound chuck roast
  • 2 chipotle chilies in adobo (chopped)
  • 1/4 cup white vinegar
  • 1 tablespoon oregano
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 2 tablespoons chili powder
  • 1 tablespoon cumin
  • 2 teaspoon minced garlic
  • 1 fresh lime ((squeezed))
  • 1 cup beef broth

Instruction

  • Place the chuck roast in an instant pot. Use at least a 6 quart instant pot.
  • Place all the other ingredients into a food processor and process until well combined. Pour the mixture on top of the roast in the instant pot.
  • Add the lid and set the valve to sealing.
  • Set the pressure for 90 minutes.
  • When the cooking is finished, do a quick release to release the pressure.
  • Remove the lid and shred the meat an stir back into the sauce.
  • Serve on your favorite tortillas and with your favorite toppings.
