  • 2 12-ounce ramekins
  • 1/4 batch My Favorite Buttermilk Pie Crust (divided in two and chilled (store-bought works too))
  • 10 ounces (about 1) boneless skinless chicken breast (cubed)
  • 1 cup sliced carrots
  • 1 cup sliced celery
  • 1/4 cup diced onion
  • 2 cups chicken broth
  • 2 tablespoons (1oz) butter
  • 2 tablespoons all-purpose flour
  • 1/3 cup milk ((any percentage))
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper
  • 1 egg
  • 1 tablespoon milk
