Ingredients

The following ingredients have 6 Servings
  • 1/2 cup red onion chopped
  • 3 cloves garlic minced
  • 1 celery stick sliced
  • 2 tbs oil
  • 1/2 tsp ground turmeric
  • 1/2 tsp ground cumin
  • 3 zucchinis cubed
  • 2 1/2 cups tomato puree
  • 1 cup frozen peas
  • 1 cup green beans
  • 1 tsp cayenne pepper

Instruction

  • In a wok, large skillet or saucepan, sauté onions, garlic, and celery in oil for 2 minutes.
  • Add turmeric, cumin and zucchini.
  • Cook over medium heat for 5 minutes.
  • Add tomato sauce, peas and cayenne pepper and cook until zucchini is tender, about 15 minutes.
