Ingredients

The following ingredients have 4 Servings
  • 1 cucumber (diced)
  • 3 tomatoes (diced)
  • 1 red onion (diced)
  • 1 chilli pepper (sliced, seeds removed if you want less heat)
  • 1 lemon (juiced)
  • 2 tbsp coriander leaves (chopped)
  • 1 tbsp mint leaves (chopped)
  • pinch salt
  • pinch pepper

Instruction

  • Prepare all the vegetables.
  • Mix together and squeeze over the lemon juice.
  • Season to taste with a little salt and pepper.
