Ingredients

The following ingredients have 8 Servings
  • 1 Pie Crust (baked and cooled (see notes))
  • 2 pounds frozen strawberries
  • 2 tablespoons lemon juice
  • 2 tablespoons water
  • 2 envelopes unflavored gelatin ((two 1-ounce packages))
  • 1 cup granulated sugar
  • pinch of salt
  • 1 pound fresh strawberries (hulled and sliced thin)
  • 12 fresh strawberries (hulled, for topping (optional))
  • 2 ounces cream cheese (softened)
  • 1 tablespoon granulated sugar
  • ½ teaspoon vanilla extract
  • ½ cup heavy cream

Instruction

  • Prepare and blind-bake a 9-inch pie pastry. Cool completely before filling.
