Ingredients

The following ingredients have 1 Servings
  • 2/3 sweet potato
  • 1 teaspoon olive oil
  • 1 teaspoon salt
  • 2 slices whole-grain bread
  • 2 tablespoons hummus
  • 1 handful kale
  • 1 ounce feta cheese
  • 1/4 avocado
  • 1 handful sprouts
  • 1/2 cup sliced tomatoes
  • 1/2 cup sliced onions

Instruction

  • Preheat the oven to 375° F. Slice the sweet potatoes into 1/4-inch-thick circles and toss them in olive oil and salt, and roast for 20 minutes.
  • While the sweet potatoes roast, toast the bread. Once toasted, spread the hummus evenly across one side of each slice.
  • Top one slice of the bread with kale, feta cheese, and sweet potatoes. Add the remaining optional ingredients if desired. Place the other piece of bread on top and enjoy!
