  • 1 1/2 tablespoons safflower or vegetable oil (plus more for frying dumplings)
  • 2/3 cup chopped shallots
  • 2 tablespoons minced ginger
  • 2 tablespoons minced garlic
  • 4 cups thinly sliced green or savoy cabbage (see note 1)
  • 1 1/2 teaspoons kosher salt
  • 2 carrots (grated (about 1 1/2 cups))
  • 1 cup chopped Chinese chives or garlic chives (see note 2)
  • 1/4 teaspoon five-spice powder (optional)
  • 1 teaspoon sesame oil (optional)
