Ingredients

The following ingredients have 12 Servings
  • 1 ½ cups Almond Flour
  • ⅓ cup Unsweetened Cocoa Powder
  • 1 teaspoon Baking Powder
  • ½ cup Brown Sugar Sweetener
  • ½ cup Unsalted Butter (softened)
  • 2 large Eggs
  • 1 tablespoon Gelatin Powder
  • 1 teaspoon Vanilla Extract

Instruction

  • Preheat your oven to 175C/350F.
  • Sift the almond flour, cocoa powder, and baking powder into a large mixing bowl. Set aside.
  • Into another mixing bowl, add the brown sweetener and butter. Using a hand mixer, beat for 2-3 minutes until pale and creamy.
  • Add the eggs one at a time, mixing in between each. Then add the gelatin and vanilla. Mix well.
  • Add the flour mixture into the butter mixture and fold together with a spatula until all the ingredients are well mixed.
  • Using a #60 cookie scoop, scoop balls of dough onto a cookie sheet lined with parchment paper.
  • Press down the balls with a spatula into disc shapes, the thinner you make your discs the crispier the cookies will be.
  • Bake for 12-15 minutes until the cookies are firm around the edges. They will harden up as they cool.
  • Leave them to cool on the tray for at least 15 minutes, then enjoy!
