Ingredients

The following ingredients have 4 Servings
  • 6 apricots, (chopped)
  • 3 Tbsp honey
  • ½ cup water
  • 1 Tbsp feta cheese, (crumbled)
  • 1 stem fresh mint, (chopped)

Instruction

  • Bring 1/2 cup of water and 3 Tablespoons honey to a boil. On medium-low heat simmer for 5 minutes. Take off heat.
  • Slice 6 apricots and stir them into syrup, making sure each slice gets covered. Let stand for 10 minutes.
  • Place apricots on a serving plate (you may drain the extra syrup). Sprinkle 1 Tablespoon crumbled feta cheese and chopped fresh mint.
