Ingredients
The following ingredients have 4 Servings
- 2 Tablespoon olive oil
- 5 cups spinach
- 3 cloves garlic (minced)
- 8 oz cream cheese (1 package, softened)
- 1/4 cup mayonnaise
- 1/4 cup Parmesan cheese (grated or shredded)
- 2 cups cheddar cheese (divided)
- 14 oz artichokes (1 can, optional)
- Salt and pepper (to taste)
Instruction
- Preheat oven to 350F
- Place the olive oil in a frying pan over medium heat.
- Sautee the garlic and spinach until the spinach is completely wilted and the garlic is very fragrant, about 3-5 minutes.
- Stir together the cream cheese, mayonnaise, Parmesan and 1 cup of the cheddar cheese. Add in the spinach- garlic mixture and artichoke hearts. Taste and season.
- Spoon the dip into a oven-proof serving dish and then cover completely with the remaining cup of cheddar cheese.
- Bake for 20-25 minutes, until cheese is golden and bubbly.
