Ingredients

The following ingredients have 4 Servings
  • 2 Tablespoon olive oil
  • 5 cups spinach
  • 3 cloves garlic (minced)
  • 8 oz cream cheese (1 package, softened)
  • 1/4 cup mayonnaise
  • 1/4 cup Parmesan cheese (grated or shredded)
  • 2 cups cheddar cheese (divided)
  • 14 oz artichokes (1 can, optional)
  • Salt and pepper (to taste)

Instruction

  • Preheat oven to 350F
  • Place the olive oil in a frying pan over medium heat.
  • Sautee the garlic and spinach until the spinach is completely wilted and the garlic is very fragrant, about 3-5 minutes.
  • Stir together the cream cheese, mayonnaise, Parmesan and 1 cup of the cheddar cheese. Add in the spinach- garlic mixture and artichoke hearts. Taste and season.
  • Spoon the dip into a oven-proof serving dish and then cover completely with the remaining cup of cheddar cheese.
  • Bake for 20-25 minutes, until cheese is golden and bubbly.
