Ingredients
The following ingredients have 50 Servings
- 2 3/4 cup warm water (90-100°)
- 1 tablespoons SAF yeast
- 1/3 cup oil
- 1/3 cup honey
- 1/3 cup applesauce
- 1 tablespoons Vital Wheat Gluten (optional)
- 1 tablespoons Dough Enhancer (optional)
- 5 1/2-6 1/2 cups Whole Wheat Flour (I prefer Bob's Red Mill (divided))
- 1 tablespoons salt
Instruction
- In stand mixer add water, yeast, oil, honey, applesauce, gluten*, dough enhancer* and 2 cups of wheat flour.
- Using a dough hook, mix until incorporated.
- Turn to lowest speed and add salt and remaining flour, 1/2 cup of flour at a time until the dough scrapes away from the edges. The total amount of flour may vary based on where you are, humidity etc.
- Once the bowl edges are clean, continue to knead on low speed for six minutes. If you skip the gluten and the dough enhancer, knead for even longer. You want to knead until you can touch the dough, and your finger pulls away clean.
- Remove and shape into two loaves. Place loaves into greased loaf pans.
- Let rise until doubled, about 30 to 45 minutes, and bake at 350° for 30 to 35 minutes or until an internal temperature reaches 200°
