Ingredients

The following ingredients have 4 Servings
  • 2 pounds boness, skinless chicken thighs (or breasts)
  • 1 Tbsp olive oil
  • kosher salt, pepper
  • 1/3 cup honey
  • 1/4 cup Sriracha
  • 1 Tbsp soy sauce
  • 1 10 oz bag cole slaw or broccoli slaw
  • 1 12 oz can corn (drained)
  • 1/2 cup cilantro (chopped)
  • 1/2 cup ranch dressing
  • 15 street taco size tortillas
  • 2 cups shredded cheese of choice

Instruction

  • Cut the chicken into bite size pieces.
  • Set a skillet over medium heat and add the olive oil. Once the olive oil is hot add the chicken, kosher salt, and pepper. Cook 6 to 8 minutes, stirring occasionally.
  • Add the honey, Sriracha, and soy sauce and cook 3 to 4 more minutes.
  • In a bowl combine the slaw, corn, cilantro, and ranch dressing. Toss until evenly mixed.
  • Warm the tortillas and fill with the chicken, top with the slaw and shredded cheese.
