Ingredients
The following ingredients have 4 Servings
- 2 pounds boness, skinless chicken thighs (or breasts)
- 1 Tbsp olive oil
- kosher salt, pepper
- 1/3 cup honey
- 1/4 cup Sriracha
- 1 Tbsp soy sauce
- 1 10 oz bag cole slaw or broccoli slaw
- 1 12 oz can corn (drained)
- 1/2 cup cilantro (chopped)
- 1/2 cup ranch dressing
- 15 street taco size tortillas
- 2 cups shredded cheese of choice
Instruction
- Cut the chicken into bite size pieces.
- Set a skillet over medium heat and add the olive oil. Once the olive oil is hot add the chicken, kosher salt, and pepper. Cook 6 to 8 minutes, stirring occasionally.
- Add the honey, Sriracha, and soy sauce and cook 3 to 4 more minutes.
- In a bowl combine the slaw, corn, cilantro, and ranch dressing. Toss until evenly mixed.
- Warm the tortillas and fill with the chicken, top with the slaw and shredded cheese.
