Ingredients

The following ingredients have 4 Servings
  • 1 1/2 cups Cascadian Farm™ organic oats & honey granola (from 16-oz box)
  • 3 tablespoons butter, melted
  • 2 tablespoons honey
  • 1/3 cup full-fat plain Greek yogurt
  • 3 tablespoons finely diced fresh mango
  • 1/2 teaspoon grated lime peel

Instruction

  • Heat oven to 350°F. Spray 12 mini muffin cups with cooking spray.
  • In food processor, place granola. Cover; process until coarsely crumbled. Add melted butter and honey, and process until combined.
  • Spoon 1 heaping tablespoon of the mixture into each muffin cup. Press mixture down in center and up sides of muffin cups.
  • Bake 9 to 11 minutes or until edges are golden brown. Remove from oven; cool completely in pan, about 30 minutes. Using tip of paring knife, gently loosen edges of cups, and remove from pan to serving tray.
  • To serve, spoon 1 slightly rounded teaspoon yogurt into each granola cup. Top with mango and lime peel. Serve immediately.
