Ingredients

The following ingredients have 2 Servings
  • 2 slices whole grain or gluten free bread
  • 1/4 cup low fat ricotta
  • 1/2 fresh lemon, juiced
  • 1/2 tablespoon honey
  • 4 figs, sliced
  • 2 tablespoons pistachio pieces
  • 1 teaspoon lemon zest

Instruction

  • Toast bread in toaster. 
  • While bread is toasting, whip together ricotta, lemon juice and honey until smooth and creamy. Spread ricotta moisture evenly over each piece of toast, then top with sliced figs. 
  • Sprinkle each piece with pistachio pieces and lemon zest. Serves 2.
