Ingredients

The following ingredients have 5 Servings
  • HONEY GINGER SAUCE:
  • 2 Tbsp.   sesame oil
  • 2 Tbsp. honey
  • 6 Tbsp.  soy sauce
  • 3 Tbsp.  rice vinegar
  • 2 Tbsp.  toasted sesame seeds
  • 1/2 tsp. fish sauce
  • 1 tsp. ground ginger
  • STIR FRY VEGGIES:
  • 3/4 c. coarsely chopped green onion
  • 1 medium zucchini
  • 1 bell pepper
  • 1 c. snow peas
  • 1 Tbsp.  sesame oil
  • 2 large eggs
  • 4 c. cauliflower rice
  • 3 chicken breast (cubed)
  • Avocado (optional)

Instruction

  • In large pan, heat sesame oil. When hot, fry eggs. Add cauliflower rice and 1/3 of the ginger honey sauce. Cook until cauliflower is soft.
  • In separate pan, add chicken and 1/3 of the honey ginger sauce. Cook chicken until it is almost fully cooked and add chopped bell pepper, zucchini, green onion, and snow peas. Add remaining sauce and cook until veggies are soft and chicken is fully cooked.
  • Layer cauliflower rice, chicken, and veggie stir fry. Garnish with green onion or avocado.
