Ingredients
The following ingredients have 4 Servings
- 1 large butternut squash (peeled, seeded and cut in 1 inch pieces)
- 2 tablespoon balsamic vinegar
- 1 tablespoon chipotle peppers in adobo sauce (minced)
- 1 tablespoon extra virgin olive oil
- 2 tablespoon honey
- ½ teaspoon salt
Instruction
- Pre-heat oven to 450 degrees.
- Line baking sheet with tin foil and set aside.
- Meanwhile, wisk together vinegar, peppers, olive oil, honey and salt in a large bowl.
- Add squash cubes to honey mixture and stir well.
- Pour squash on to baking sheet and spread into an even layer.
- Bake for 15-20 minutes turning once.
