Ingredients

The following ingredients have 4 Servings
  • 1 large butternut squash (peeled, seeded and cut in 1 inch pieces)
  • 2 tablespoon balsamic vinegar
  • 1 tablespoon chipotle peppers in adobo sauce (minced)
  • 1 tablespoon extra virgin olive oil
  • 2 tablespoon honey
  • ½ teaspoon salt

Instruction

  • Pre-heat oven to 450 degrees.
  • Line baking sheet with tin foil and set aside.
  • Meanwhile, wisk together vinegar, peppers, olive oil, honey and salt in a large bowl.
  • Add squash cubes to honey mixture and stir well.
  • Pour squash on to baking sheet and spread into an even layer.
  • Bake for 15-20 minutes turning once.
