Ingredients

The following ingredients have 4 Servings
  • 500 g 5% fat pork mince
  • 2 cloves of garlic (crushed)
  • 3 tbsp clear honey
  • 2 large limes (juiced)
  • 1/2 small red chilli (finely chopped)
  • 1 tbsp dark soy sauce
  • 170 g tortilla chips
  • 40 g 30% fat Cheddar cheese (grated)
  • 2 tomatoes (diced)
  • 1/2 medium red onion (thinly sliced)
  • 150 g low fat Greek yoghurt
  • 1/4 tsp garlic granules
  • salt and pepper to taste
  • 10 g fresh coriander leaves (roughly chopped)
  • low-calorie cooking spray

Instruction

  • Spray a medium frying pan with low calorie cooking spray and place over a medium heat.
  • Add the minced pork and garlic and fry until sealed and lightly browned on all sides.
  • Add the honey, lime juice, chilli and soy sauce and fry for 20 - 25 minutes, stirring occasionally, until all juices have evaporated. Season to taste.
  • Spread the tortilla chips over a baking tray and spread the pork mixture over.
  • Sprinkle with grated cheese and grill on a low setting for 2 - 3 minutes until the cheese has melted.
  • Top with the tomatoes and red onion.
  • In a small bowl mix together the yoghurt and garlic granules and season to taste.
  • Spoon the yoghurt mixture over and sprinkle with coriander leaves. Serve at once.
