Ingredients
The following ingredients have 4 Servings
- 500 g 5% fat pork mince
- 2 cloves of garlic (crushed)
- 3 tbsp clear honey
- 2 large limes (juiced)
- 1/2 small red chilli (finely chopped)
- 1 tbsp dark soy sauce
- 170 g tortilla chips
- 40 g 30% fat Cheddar cheese (grated)
- 2 tomatoes (diced)
- 1/2 medium red onion (thinly sliced)
- 150 g low fat Greek yoghurt
- 1/4 tsp garlic granules
- salt and pepper to taste
- 10 g fresh coriander leaves (roughly chopped)
- low-calorie cooking spray
Instruction
- Spray a medium frying pan with low calorie cooking spray and place over a medium heat.
- Add the minced pork and garlic and fry until sealed and lightly browned on all sides.
- Add the honey, lime juice, chilli and soy sauce and fry for 20 - 25 minutes, stirring occasionally, until all juices have evaporated. Season to taste.
- Spread the tortilla chips over a baking tray and spread the pork mixture over.
- Sprinkle with grated cheese and grill on a low setting for 2 - 3 minutes until the cheese has melted.
- Top with the tomatoes and red onion.
- In a small bowl mix together the yoghurt and garlic granules and season to taste.
- Spoon the yoghurt mixture over and sprinkle with coriander leaves. Serve at once.
