Ingredients

The following ingredients have 4 Servings
  • 2 Tbsps runny honey
  • 1 cup unsalted butter (scant)
  • 0.333 cup light brown sugar
  • 2 large eggs
  • 1.75 cups self-rising flour (sifted)
  • 1 tsp Mixed spice
  • 1 cup sliced almonds

Instruction

  • Heat the honey, butter and sugar in a pan over a low heat until melted. Increase the heat and bubble for 1 minute. Remove from the heat and leave to cool for 15 minutes.
  • Heat the oven to 170°C (150° fan) 325°F gas 3. Grease a 900g|2lb loaf tin and line the base with non-stick baking paper.
  • Mix the eggs into the butter mixture.
  • Sift the flour and mixed spice into a mixing bowl and add the butter mixture. Mix well.
  • Pour into the tin and sprinkle the almonds on top.
  • Bake for 40-50 minutes, until a skewer inserted into the centre comes out clean. Cool in the tin for 5 minutes, then place on a wire rack to cool completely.
