Ingredients
The following ingredients have 4 Servings
- 2 Tbsps runny honey
- 1 cup unsalted butter (scant)
- 0.333 cup light brown sugar
- 2 large eggs
- 1.75 cups self-rising flour (sifted)
- 1 tsp Mixed spice
- 1 cup sliced almonds
Instruction
- Heat the honey, butter and sugar in a pan over a low heat until melted. Increase the heat and bubble for 1 minute. Remove from the heat and leave to cool for 15 minutes.
- Heat the oven to 170°C (150° fan) 325°F gas 3. Grease a 900g|2lb loaf tin and line the base with non-stick baking paper.
- Mix the eggs into the butter mixture.
- Sift the flour and mixed spice into a mixing bowl and add the butter mixture. Mix well.
- Pour into the tin and sprinkle the almonds on top.
- Bake for 40-50 minutes, until a skewer inserted into the centre comes out clean. Cool in the tin for 5 minutes, then place on a wire rack to cool completely.
