Ingredients
The following ingredients have 6 Servings
- 1 1/2 cups plain breadcrumbs
- 2 tsp sea salt
- 1 1/2 tsp sugar
- 3/4 tsp paprika (not smoked)
- 3/4 tsp onion powder
- 3/4 tsp garlic powder
- 1/2 tsp black pepper
- pinch of cayenne, optional
- 1 tsp dried basil, oregano or parsley (any combination of these will work)
- 1/4 cup vegetable oil
- 3 lbs boneless, skinless chicken breast (about 6), 3 lbs of chicken breast tenders or 6 (1/2 inch thick) bone-in or boneless pork chops.
Instruction
- Heat the oven to 400°F
- Combine the breadcrumbs, salt, sugar, paprika, onion powder, garlic powder, black pepper, cayenne and your choice of dried herbs in a large zip-top bag
- Seal the bag and toss the spice mixture until combined
- Open the bag, drizzle in the oil
- Seal the bag and mix again until the oil is fully incorporated
- Fill a medium-sized bowl or pie pan with a little water
- Working with one chicken breast or pork chop at a time, moisten the meat with the water, allowing any excess to drip off back into the pan
- This will help the spiced breadcrumb mixture adhere to the meat
- One at a time, add the pieces of chicken or pork to the bag of seasoned breadcrumbs
- Add one piece, seal the bag and shake until the meat is completely covered in breadcrumbs
- Open the bag and move the crumb-coated meat to an ungreased or foil-covered rimmed baking sheet
- Repeat with remaining pieces or meat
- Cook until the internal temperature of the meat is where it’s supposed to be when checked with an instant-read thermometer—165° F for chicken or 145°F for pork chops
- It will take about 15-20 minutes, depending on the thickness of your meat
- Do not cover or turn the meat while baking.
