Ingredients

The following ingredients have 6 Servings
  • 1 1/2 cups plain breadcrumbs
  • 2 tsp sea salt
  • 1 1/2 tsp sugar
  • 3/4 tsp paprika (not smoked)
  • 3/4 tsp onion powder
  • 3/4 tsp garlic powder
  • 1/2 tsp black pepper
  • pinch of cayenne, optional
  • 1 tsp dried basil, oregano or parsley (any combination of these will work)
  • 1/4 cup vegetable oil
  • 3 lbs boneless, skinless chicken breast (about 6), 3 lbs of chicken breast tenders or 6 (1/2 inch thick) bone-in or boneless pork chops.

Instruction

  • Heat the oven to 400°F
  • Combine the breadcrumbs, salt, sugar, paprika, onion powder, garlic powder, black pepper, cayenne and your choice of dried herbs in a large zip-top bag
  • Seal the bag and toss the spice mixture until combined
  • Open the bag, drizzle in the oil
  • Seal the bag and mix again until the oil is fully incorporated
  • Fill a medium-sized bowl or pie pan with a little water
  • Working with one chicken breast or pork chop at a time, moisten the meat with the water, allowing any excess to drip off back into the pan
  • This will help the spiced breadcrumb mixture adhere to the meat
  • One at a time, add the pieces of chicken or pork to the bag of seasoned breadcrumbs
  • Add one piece, seal the bag and shake until the meat is completely covered in breadcrumbs
  • Open the bag and move the crumb-coated meat to an ungreased or foil-covered rimmed baking sheet
  • Repeat with remaining pieces or meat
  • Cook until the internal temperature of the meat is where it’s supposed to be when checked with an instant-read thermometer—165° F for chicken or 145°F for pork chops
  • It will take about 15-20 minutes, depending on the thickness of your meat
  • Do not cover or turn the meat while baking.
