  • 1 cup salt (kosher, canning, or table salt, see notes 1)
  • 2 cups water
  • 6 duck/chicken whole eggs
  • 1/2 cups vinegar (see notes 2)
  • 1 1/2 cups water
  • 6 duck/chicken egg yolks
  • salt (kosher, canning, or table salt)
  • Cheesecloth or coffee filter
  • Water (to rinse off salt)
  • Wood chips or tea leaves (I used tea leaves)
