Ingredients
The following ingredients have 10 Servings
- 2 tbsp Unflavored gelatin (or agar agar)
- 2 cups Mango juice
- 2 cups Mango fruit pulp (Fresh or canned)
- 1 cup Yogurt (optional)
- 1/4 cup Water
- 1/4 cup Sugar (up to 1/2 cup - depending on the sweetness of the mangoes)
Instruction
- Soak the gelatin in 1/4 cup water and let stand for about 2 minutes.
- Heat in the microwave for 30 seconds or on a double boiler.
- Keep warm.
- Wash, peel and roughly dice the mangoes to a smooth pulp.
- Add mango juice to the slightly warm gelatin.
- Next, add in the mango fruit.
- Add sugar - adjust for sweetness.
- Blend the mixture until smooth.
- If using -add yogurt now and blend some more.
- Taste and adjust sweetness.
- Pour into Popsicle molds.
- Freeze for at least 3 hours or overnight.
- To unmold just pour some warm water on the Popsicle mold overnight so it releases.
