Ingredients

The following ingredients have 10 Servings
  • 2 tbsp Unflavored gelatin (or agar agar)
  • 2 cups Mango juice
  • 2 cups Mango fruit pulp (Fresh or canned)
  • 1 cup Yogurt (optional)
  • 1/4 cup Water
  • 1/4 cup Sugar (up to 1/2 cup - depending on the sweetness of the mangoes)

Instruction

  • Soak the gelatin in 1/4 cup water and let stand for about 2 minutes.
  • Heat in the microwave for 30 seconds or on a double boiler.
  • Keep warm.
  • Wash, peel and roughly dice the mangoes to a smooth pulp.
  • Add mango juice to the slightly warm gelatin.
  • Next, add in the mango fruit.
  • Add sugar - adjust for sweetness.
  • Blend the mixture until smooth.
  • If using -add yogurt now and blend some more. 
  • Taste and adjust sweetness. 
  • Pour into Popsicle molds.
  • Freeze for at least 3 hours or overnight. 
  • To unmold just pour some warm water on the Popsicle mold overnight so it releases.
