Ingredients

The following ingredients have 10 Servings
  • 4 cups old fashioned oats
  • 2 cups sliced almonds
  • 1 ½ cups coconut flakes (sweetened or unsweetened)
  • ¼ teaspoon sea salt
  • ½ cup honey
  • ½ cup vegetable oil or melted coconut oil
  • 1 teaspoon vanilla extract
  • 2 teaspoons almond extract
  • 2 cups chopped dried figs

Instruction

  • Preheat the oven to 375° F with a rack in the center position
  • Line a rimmed baking sheet with parchment paper
  • In a large bowl, stir together the oats, almonds, coconut flakes and salt until combined.In a small bowl whisk together honey, oil, vanilla and almond extract
  • Pour the honey mixture into the oats and toss together until combined.Pour the oats onto the prepared baking sheet and spread out evenly
  • Bake until lightly golden, about 20 minutes, stirring the granola half way through to prevent uneven browning
  • Remove the granola from the oven and let it cool
  • Stir in the figs
  • Store in an airtight container for up to 1 week
