Ingredients

The following ingredients have 6 Servings
  • 2-1/2 cups all-purpose flour
  • 1/4 teaspoon salt
  • 2 tablespoons coconut or granulated sugar
  • 1-1/4 tablespoons Earth Balance® Original Buttery Spread, divided (1 cup cold and 1/4 cup melted)
  • 1/2 cup cold water
  • 1-1/2 teaspoons vanilla extract
  • 3 teaspoons warm water
  • 2 cups sweet cherries, pitted and stemmed
  • 1/2 cup coconut or granulated sugar
  • 1 tablespoon lemon juice
  • pinch salt
  • 1 cup confectioners' sugar
  • 1 teaspoon almond milk

Instruction

  • To the bowl of a food processor, add flour, salt and 2 tablespoons sugar, pulsing until combined. Add buttery spread, pulsing until well incorporated. With processor running, add vanilla and cold water, mixing until just combined. Roll dough into a ball, cover with cling wrap and chill for at least 20 minutes.
  • While dough is chilling, prepare the cherry filling. In a small bowl, combine cornstarch and 3 teaspoons water, and set aside.
  • In a medium saucepan over medium heat, cook the cherries, sugar, lemon juice and salt for about 5 minutes, stirring occasionally. Stir in cornstarch mixture and bring to a boil, stirring constantly to prevent burning. Remove from heat and stir in vanilla. Remove to a bowl and allow to cool before pulsing in a food processor.
  • Preheat oven to 375°F.
  • On a floured surface, roll out dough and use a pizza cutter to make rectangles in the size you'd like your toaster pastries.
  • Arrange half of the dough rectangles on a parchment-lined baking sheet and top with 2 tablespoons of cherry filling. Using a fork, poke holes in the remaining dough rectangles before placing over the cherry filling. Crimp the edges with a fork to seal.
  • Brush the tops with melted Earth Balance® Original Buttery Spread and bake for 30 minutes, until golden brown.
  • While toaster pastries are baking, prepare the cherry icing by combining remaining cherry filling, confectioner's sugar and almond milk in a small bowl, adding more almond milk to reach desired consistency. Allow toaster pastries to cool before drizzling with icing.
