Ingredients

The following ingredients have 4 Servings
  • 1/3 cup Popcorn Kernels
  • 1/4 cup Corn Syrup
  • 225 grams Salted Butter
  • 220 grams Fine Dark Brown Sugar
  • 1 tsp Vanilla Extract
  • 1/2 tsp Baking Soda
  • 1 tsp Salt (optional)

Instruction

  • Pop your popcorn kernels however you like. For this recipe it doesn't really matter, but in my opinion simply doing it on the stove is fine. While you can use bagged popcorn, be careful not to get ones with all the butter as I don't think it would give the best flavor to the finished product. Place all popped popcorn in a large bowl.
  • Preheat your oven to 85°C
  • In a saucepan on medium high heat begin by melting the butter. When the butter is melted, add the Corn Syrup, Brown Sugar, and Salt. Stir for a minute or so, then turn the heat up high and bring everything to a boil while stirring constantly.
  • Once the sauce has started to boil, stop stirring for about 5 minutes to let it thicken up. Add the Baking Soda and Vanilla Extract and stir to incorporate.
  • Drizzle the caramel slowly over the bowl of popcorn, tossing the popcorn as best you can to give it a nice coating. You don't need to cover every part of the popcorn, but you want every one to at least have some caramel.
  • Place the popcorn on a baking tray, or even in a casserole dish and place in the oven. Give it a toss every 10-15 minutes for about 1 hour, never longer. When done, remove from the oven sprinkle the salt over all the popcorn. This is optional, but I feel like it greatly brings out the flavors of the caramel and not just the sweetness. Allow to cool, break it up, and you've just made Homemade Caramel Popcorn.
