Ingredients
The following ingredients have 4 Servings
- 3/4 cups creamy peanut butter
- 1/2 cup butter (softened)
- 1/2 teaspoon vanilla
- 1/2 teaspoon kosher salt
- 2 1/2 cups powdered sugar
- FOR THE CHOCOLATE COATING
- 2 cups dark chocolate chips
- 2 tablespoons coconut oil
Instruction
- Using an electric mixer or stand mixer, mix together the butter, peanut butter, salt and vanilla until smooth and creamy.
- Add the powdered sugar in a couple batches.
- Cream the peanut butter mixture together until it's smooth.
- Scoop the batter, roll into 1-inch balls and placed a baking sheet lined with parchment paper or wax paper.
- Refrigerate for 10 minutes, roll into smooth balls. Pop into the freezer for 20 minutes or refrigerate overnight.
- FOR THE CHOCOLATE COATING
- Add the coconut oil to the chocolate chips. Melt in the microwave at 30 second intervals, stopping to stir every 30 seconds. Continue until the chocolate is completely smooth.
- Insert toothpick into the top of the chilled peanut butter balls. Then dip it in the chocolate coating.
- Allow excess chocolate to drizzle off and place it on a cookie sheet lined with parchment paper.
- Refrigerate the homemade buckeyes so chocolate can harden. Serve and enjoy!
