Ingredients
The following ingredients have 18 Servings
- 1/2 pound bacon (halved length-wise)
- 1 medium onion (chopped)
- 1/4 cup chopped green bell pepper
- 3 (28 ounce) cans Pork n Beans
- 3/4 cup barbecue sauce
- 1/2 cup brown sugar
- 1/4 cup cider vinegar
- 1/4 cup prepared yellow mustard
- 3 tablespoons ketchup
- 1 tablespoon chili powder
Instruction
- In a large pot over high heat, fry bacon to partially cooked, with a nice sear on the outside. Drain and set aside, leaving drippings in pot.
- Add onions and peppers to the pot with the drippings. Saute until tender, about 5 minutes.
- Add Pork n Beans and remaining ingredients (except bacon) to the pot and bring to a low simmer.
- Pour bean mixture into a 9"x13" baking dish. Top with bacon.
- Bake in 325° oven for about 2 hours.
- Remove oven and allow to stand for sauce to thicken before serving.
