Ingredients

The following ingredients have 4 Servings
  • 1 cup instant, one-minute, old fashioned, or steel-cut oats
  • 6 egg whites
  • 1 cup fat-free plain Greek yogurt
  • 1/4 teaspoon vanilla extract
  • 1/4 teaspoon ground cinnamon
  • 1 tablespoon stevia, powdered monk fruit or Swerve Sweetener
  • 1/2 teaspoon baking powder

Instruction

  • Place oats in a blender. Pulse until oats ground into a fine-ish, flour-like powder.
  • Place remaining ingredients in blender and pulse until combined. If too thick, add a little water.
  • Coat a hot pancake griddle or frying pan with a little oil or a non-stick spray over medium heat.
  • Pour approximately 1/4 cup of batter to make a 3-4" pancake. Cook until the batter starts to bubble. Flip over. Cook until golden and cooked through.
