Ingredients
The following ingredients have 4 Servings
- 1 cup instant, one-minute, old fashioned, or steel-cut oats
- 6 egg whites
- 1 cup fat-free plain Greek yogurt
- 1/4 teaspoon vanilla extract
- 1/4 teaspoon ground cinnamon
- 1 tablespoon stevia, powdered monk fruit or Swerve Sweetener
- 1/2 teaspoon baking powder
Instruction
- Place oats in a blender. Pulse until oats ground into a fine-ish, flour-like powder.
- Place remaining ingredients in blender and pulse until combined. If too thick, add a little water.
- Coat a hot pancake griddle or frying pan with a little oil or a non-stick spray over medium heat.
- Pour approximately 1/4 cup of batter to make a 3-4" pancake. Cook until the batter starts to bubble. Flip over. Cook until golden and cooked through.
