Ingredients

The following ingredients have 4 Servings
  • 1 onion (finely chopped)
  • 2 garlic cloves (finely chopped)
  • 3 Tbsps olive oil
  • 2.333 cups Risotto (e. g. Arborio)
  • 1 cup dry white wine
  • 1 organic lemon (juiced and zest grated)
  • 4 cups chicken stock
  • 2.667 cups smoked Salmon (cut into bite-sized pieces)
  • 4 Tbsps fresh Dill (chopped)
  • 4 Tbsps Parmesan (grated)
  • 2 Tbsps butter
  • lemon zest (to garnish)

Instruction

  • Fry the onion and garlic in a pot in the hot oil. Add the rice and then deglaze with the white wine.
  • Simmer for 3 minutes, then add the lemon juice and zest and quench with some of the stock. Boil on a medium heat stirring continuously. Continue to add stock, let it be absorbed by the rice and continue until the rice is creamy but still slightly al dente. (Approx. 20 minutes)
  • Stir in the salmon and then add the dill, parmesan and the butter. Season with salt and ground black pepper, garnish with lemon zest and serve immediately.
