Ingredients

The following ingredients have 4 Servings
  • 1 tablespoon + 1 teaspoon extra virgin olive oil
  • 2 tablespoons minced shallots
  • 1/2 teaspoon dried thyme
  • 1 tablespoon balsamic vinegar
  • 1/4 teaspoon kosher salt
  • 2 large heirloom tomatoes, (each cut into six ½ inch slices)
  • 3 tablespoon crumbled blue cheese
  • Minced flat-leaf parsley, (for garnish)

Instruction

  • Heat 1 teaspoon olive oil in a small nonstick skillet set over medium heat. Add the shallots and thyme, and saute until the shallots are tender and starting to brown, 2 to 3 minutes. Transfer to a small bowl.
  • To the shallots, add the remaining 1 tablespoon olive oil, balsamic vinegar and salt. Whisk to combine.
  • Arrange the tomatoes on a serving dish and drizzle the shallot mixture over the tomatoes.
  • Top with the blue cheese and parsley. Serve.
