Ingredients
The following ingredients have 4 Servings
- 1 tablespoon + 1 teaspoon extra virgin olive oil
- 2 tablespoons minced shallots
- 1/2 teaspoon dried thyme
- 1 tablespoon balsamic vinegar
- 1/4 teaspoon kosher salt
- 2 large heirloom tomatoes, (each cut into six ½ inch slices)
- 3 tablespoon crumbled blue cheese
- Minced flat-leaf parsley, (for garnish)
Instruction
- Heat 1 teaspoon olive oil in a small nonstick skillet set over medium heat. Add the shallots and thyme, and saute until the shallots are tender and starting to brown, 2 to 3 minutes. Transfer to a small bowl.
- To the shallots, add the remaining 1 tablespoon olive oil, balsamic vinegar and salt. Whisk to combine.
- Arrange the tomatoes on a serving dish and drizzle the shallot mixture over the tomatoes.
- Top with the blue cheese and parsley. Serve.
